It’s official. Cupcakes don’t have to be high calorie or full of fat to be delicious!
Wait until you try these Pineapple Angel Food Cupcakes. The second recipe that will help us “have our cupcakes and keep them off our behinds”. So very yummy, easy to make, and only 92 calories and 1.8 grams of fat each.*

WHAT YOU NEED
Reynolds® Baking Cups (Baked for YouTM Polka Dots)
1 box (16 oz.) Angel Food Cake Mix
2 cans (20 oz. each) crushed pineapple, undrained
1 container (8 oz.) frozen whipped topping, thawed
INSTRUCTIONS
- Preheat oven to 350 degrees F.
- Place baking cups in muffin pan, set aside. Note: This recipe will make about 32 cupcakes.
- Blend cake mix and 1 can of undrained crushed pineapple (pineapple and juice) with spoon. Don’t add other ingredients called for by cake mix. Don’t use a mixer, and don’t overmix.
- Fill baking cups 1/2 full. Consider using a 2Tb ice cream scoop for consistency. Don’t overfill as these cupcakes will puff up quite a bit.
- Bake cupcakes for 15 minutes at 350 degrees F; cool completely.
- Drain second can of crushed pineapple.
- Fold gently into whipped topping.
- Top cupcakes with 2 Tablespoons of whipped pineapple topping each.

I don’t like pineapple, I wonder if these could be made with a can of Manderian Oranges instead.

I dont see why not. I am not familiar with Mandarin oranges if they come “crushed” or not like the recipe calls for the pineapple. I am sure it isnt to hard to crush them yourself if they do not come crushed already. Actually that does sound better than pineapple, maybe I will try that instead.
